Water:

Cracked head or lame gasket

But normally with a cracked head or bad head gasket you'll get a puddle of water on a piston, it'll be hard to start, but after constantly turning it over it'll pick up, and you'll get steam out the back of the exaust (just white smoke with no real oil smell).

Oil:

Um, in the air filter? That got to be the most odd thing I've heard - Unless you've had the car upside down lately.

In the last service they might have over filled your engine oil causing it to somehow get up the air intake.

Check the dipstick and make sure it's not over the "full" line.

If it is you can A) let some oil out of the engine from the funky bolt underneathe or b) just run it until you burn that exess oil lol.

If the dipstick reads that the level is within reason - I can't help you :P

...

But in the air filter? I still have no idea how it could get there unless you're car's been on it's roof :/

Coolant loss might be due to tiny leak in a hose somewhere?

I'm losing a small amount of coolant due to my thermo setup, I can't see it leak but I can hear it hissing very quietly from the hose the capillary is poking through.

Still, it's not losing much at all and I'm quite happy to top it up every now & then at the rate it's going at. I've lost ~200ml over 3000kms.

PS oil in air filter? K&N filter maybe? :P

The oil on the air filter is the result of excessive blowby resulting in high crankcase pressure being vented into the air cleaner, which on the CFI has the oil vent pipe going to the aircleaner. Live with it as the fix is either new rings or a rebore. Unless the filter is fully saturated it is no problem. Maybe run a heavier grade of oil - 40/70 and this will cut consumption.

All cars will blow some water and black crap out the tailpipe until they are fully hot...like after 5 to 10km. Try some injector cleaner in the tank...this may improve your idle. Also remember your car is 18 years old so don't expect a good idle etc.
