how do i adjust the sensitivity of the power steering in an 89 EA? the guy that had it before me towed caravans and he tweaked it so it it REALLY sensitive!

The only way you can change it is by getting the power steering pump and steering rack re-valved. Have you driven another EA before? They have pretty light steering.
Adding castor to the front wheels will give the steering wheel more weight and feel.
